Copycat Krispy Kreme Doughnuts

Ingredients

  • Doughnuts
  • 2 1/4 tsp active dry yeast
  • 1/2 cup warm water, 110 degrees
  • 1/4 cup granulated sugar, divided
  • 1/4 cup evaporated milk, warmed to 110 degrees
  • 1/2 tsp salt
  • 1/4 cup vegetable shortening, at room temperature
  • 1 large egg
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour, then more as needed
  • 3 - 4 cups vegetable shortening, for frying
  • Glaze

  • 2 Tbsp unsalted butter, melted
  • 1 1/3 cups powdered sugar
  • 1 pinch salt
  • 2 tsp evaporated milk
  • 1/2 tsp vanilla extract
  • 3 - 4 tsp hot water

Slow Cooker Chicken Enchilada Soup

Ingredients

  • 3 large chicken breast halves
  • 2 (14 oz) cans chicken broth
  • 2 (8 oz) cans tomato sauce
  • 2/3 cup chunky salsa (I use Pace Chunky Hot Salsa)
  • 1/2 cup Zesty Italian Dressing
  • 2 Tbsp chili powder
  • 1 tsp cumin
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1/4 cup extra virgin olive oil
  • 1/2 cup Masa Harina
  • 2 cups milk
  • 2 cups frozen corn
  • 1 (14 oz) can black beans, drained and rinsed
  • 1 (14 oz) can pinto beans, drained and rinsed
  • 2/3 cup shredded Cheddar Cheese
  • 2/3 cup shredded Monterrey Jack Cheese
  • Salt and Pepper, to taste

For Serving (all optional, but I'd say sour cream is a must):

  • Additional shredded Cheddar and Monterrey Jack Cheese
  • Diced avocados
  • Sour Cream
  • Chopped cilantro
  • Chopped green onions
  • Tortilla Chips or strips

Kale White Bean and Sausage Soup

Ingredients

  • 1 Tbsp olive oil
  • 12 oz beef Polska Kiebasa Sausage, sliced into 1/4-inch thick slices (I used Hillshire Farm and really liked it)
  • 1 1/2 cups chopped carrots (about 3)
  • 1 1/3 cups chopped yellow onion (1 medium)
  • 1 cup chopped celery (2 stalks)
  • 4 cloves garlic, minced
  • 3 (14.5 oz cans) low-sodium chicken broth
  • 1 cup water
  • 1 Tbsp dried parsley
  • 1 tsp dried rosemary, crushed
  • 1/2 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • 6 oz kale, thick ribs removed, chopped (about 1 1/2 bunches. 5 oz if using pre-cut)
  • 2 (14.5 oz) cans cannellini beans, drained and rinsed
  • Shredded parmesan cheese, for serving

Ingredients

  • 1 - 8 oz package of fresh ravioli – I used Trader Joes goat cheese and sun dried tomato ravioli
  • ½ pound of asparagus – snap off the tough ends – chop asparagus into thirds or smaller.
  • 1 half lemon
  • 2 tbs butter
  • ¼ cup walnut pieces
  • 2 tbs minced parsley
  • 6 twists of pepper
  • 2 tbs grated parmesan plus some to serve at the table.

  • 2 lbs salmon, cut into 4 pieces
  • 1 tbs olive oil (I used light extra virgin olive oil)
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • 1 tsp onion powder
  • ½ tsp ancho chili powder
  • 1 tsp black pepper

  • for the Avocado salsa:

  • 1 avocado, sliced
  • ½ small red onion, sliced
  • Juice from 2 limes
  • 1-2 tbs finely chopped cilantro (depending on how big of a cilantro lover you are)
  • Salt to taste

Ingredients:

Bottom Shortbread Cookie Crust:


  • 1/2 cup (2 oz) confectioners' sugar
  • 1 1/2 cups (7 1/2 oz) unbleached all-purpose flour (measured with scoop and sweep)
  • 3/4 cup (6 oz) unsalted butter
  • pinch salt
  • 1 teaspoon lemon thyme, finely chopped (optional) – my kids didn’t notice it and it makes it more interesting for us adults. You can add more if you love the taste of thyme.

Blueberry Filling:


  • 6 cups fresh or frozen blueberries
  • 1 tablespoon fresh ginger, finely chopped
  • 1/2 cup sugar
  • 2 tablespoons cornstarch

Cream Cheese Dough for Lattice Top Crust:


  • 8 ounces cream cheese
  • 1/2 cup (4 oz) unsalted butter
  • 1/2 cup (2 oz) confectioner’s sugar
  • 2 cups (9 oz) unbleached all-purpose flour (measured with spoon and sweep)
  • Egg wash for top crust (1 egg mixed with 1 tablespoon water)
  • Sugar to sprinkle on top crust
